Katsuya Ko

Katsuya Ko is a completed hospitality project in La Jolla, San Diego, by Studio Murnane. Listed at about 3,000 square feet under restaurants and retail, it marks the first evolution of Chef Katsuya Uechi Michelin-recognized dining legacy into a high-performance, fast-casual format, what the studio frames as a high-end convenience destination rather than a conventional full-service sushi room.

Interior architecture reworks the traditional sushi bar into a streamlined spatial sequence. Heritage-inspired materiality is set against modern geometric forms so the room can support rapid throughput without losing a sense of permanent design weight. Saturated color and environmental graphics operate as architectural markers, guiding the guest journey through the plan. Digital-forward operational flow is coordinated with refined detailing so service speed and design presence occupy the same interior volume.

As restaurant design in San Diego, Katsuya Ko tests how Japanese fine-dining prestige can scale into a contemporary urban format. Spatial choreography and structural refinement keep the prototype clear enough to extend the Katsuya brand while still reading as architecture, not only fit-out.
